Centralized Meat Cutting Department Supervisor
Job Summary:
To oversee all functions and operations within the CMC department, be responsible for ordering, receiving, accounting, invoicing to stores, inventory levels, scheduling, staff management, and all daily functions and operations within CMC. This role involves ensuring that the production process adheres to safety, quality and regulatory standards.
Key Duties & Responsibilities:
- · Oversee daily meat production operations, ensuring products are processed and packaged according to specifications.
- · Direct and support a team of workers, including training, scheduling, and task assignments.
- · Ensure meat products meet quality standards, including appearance, texture, while adhering to customer specifications.
- · Enforce strict adherence to food safety regulations, workplace safety standards, and hygiene protocols.
- · Monitor inventory levels of raw materials and finished goods, ensuring proper equipment maintenance and functionality.
- · Identify and resolve production issues, including equipment malfunctions, product defects, and worker concerns.
- · Maintain detailed production logs and reports, documenting challenges and successes.
- · Continuously seek ways to improve efficiency, safety, and quality of meat production.
- · Ensure all staff follow job descriptions, standard operating procedures (SOPs), and required operational principles.
- · Oversee paperwork, data recording, invoicing, and order delivery to the warehouse daily.
- · Ensure all meats are properly weighed and recorded for store orders, maintaining accuracy to store needs and specifications.
- · Perform duties safely and efficiently in accordance with company policies and procedures.
- · Assist in new staff training on product rotation, sanitation procedures, equipment use, storage, and stocking.
- · Maintain regular housekeeping and sanitation standards, ensuring compliance with health regulations and HSSE guidelines. Work areas must be properly cleaned, sanitized, and prepared for the next day.
- · Ensure products are transported promptly to refrigerated storage and shipped via CMC Chill Meat trucks to maintain the cold chain.
- · Verify product accuracy, including descriptions and weights.
- · Ensure product rotation aligns with company policies and expiration dates.
- · Follow department procedures for handling damaged and spoiled products.
- · Adhere to company merchandise handling policies to minimize shrinkage from broken or expired products.
- · Assist in weighing, recording, and replenishing products when necessary.
- · Possess comprehensive knowledge of department operations, meat cutting techniques, and equipment use, including grinders and saws.
- · Perform any necessary duties to support department operations, even if outside regular job scope.
- · Ensure employees wear appropriate clothing and PPE for working in cold environments.
- · Participate in ongoing training and educational programs to enhance skills and improve departmental operations.
Requirements:
- Evidence of experience in the Retail Industry with experience and familiarity with products in meat operations.
- Ability to add, subtract, multiply, calculate percentages (%) and decimals.
- Ability to read and understand.
- Computer skills and knowledge an asset.
- Understanding inventory levels, counts and recording of products.

- On a daily basis the ability to stoop, bend, reach and lift (a max of 20kgs/50 lbs)
