As a Beverage Manager for you will be responsible for leading and creating experience by Managing the operation of the bars and by developing and implementing strategies and services which meet all Shore Club standards.

Role and Responsibilities

  •  Assist F&B Director with developing and implementing strategies to achieve revenue and profit goal.
  • Ensure that all interdepartmental transfers are properly recorded.
  •  Assist in the development of the marketing plan for the outlets by keeping current on competitors on a regular basis.
  •  Assist Restaurant Managers in developing and implementing special promotions to increase revenue.
  •  Manage Sui Ren, Sea Grapes and Collonade which includes Pool & Beach cocktail servers and room service in regards to beverage operations and keeps close communication with respective Managers.
  •  Ensure maintenance and standards of employee uniforms, grooming and personal appearance is in line with our service culture requirements.
  •  Provide employees with current up-to-date information on revenue and service goals.
  •  Maintain POS systems and reports as well as analysis on gross profit.
  •  Increase sales by coaching employees on effective sales and service techniques.
  •  Manage the operation of the bars and any other areas/departments as needed and instructed.
  •  Conduct with weekly inspections of all Food & Beverage Bar areas as verified by weekly inspection reports.
  •  Implement and maintain the style of service in the bars which creates a Shore Club luxury experience.
  •  Inspect the bars daily and take appropriate steps to ensure the facility meets Shore Club standards at all times.
  •  Conduct pre-shift meetings to discuss specials, house count, reservations, and to continuously reinforce Shore Club service standards.
  •  Conduct daily spot checks at opening, bartenders change of shifts and closing of the bars as well as banquet beverage events and banquets cash bar controls.
  •  Ensure that bar menus are up to date and all items are available in each bar participating in ordering of supplies, maintenance of pars and inventory turnover.
  •  Maximize use of guest history information to ensure a high level of guest recognition and personalized service.
  •  Participate and assists Cost Controller in monthly and quarterly inventories.
  •  Assist in developing and implementing strategies and practices which support employee engagement.
  •  Provide employees with the orientation and training to understand expectations and perform job responsibilities as reported in monthly training reports.
  •  Communicate performance expectations and provides employees with on-going feedback.
  •  Provide employees with coaching and counselling as needed to achieve performance objectives and reach their fullest potential.
  •  Any other ad hoc duties or tasks as assigned or directed by management.

Key Skills and Requirement


  •  Must have the ability to compute basic mathematical calculations.
  •  Ability to possess a strong familiarity with beverage cost controls and superior customer service.
  •  Must have experience working knowledge with systems POS system.
  •  Ability to withstand prolonged standing, stretching, bending and kneeling without restriction, work indoors, outdoors and be exposed to various environmental factors such as, but not limited to CRT fatigue, noise, dust, cigarette smoke.
  •  Ability to work in a fast-paced, busy, and somewhat stressful environment and maintain physical stamina, proper mental attitude while dealing effectively with guests, management, team members, and outside contacts while working under pressure and meeting deadlines.
  •  Ability to work with others, communicate well, receive direction; review your own work.
  •  Maintain a positive attitude toward work and interface with guests in a friendly and polite manner.
  •  Ability to address stressful situations with clients with dignity and the utmost tact and politeness.
  •  Must be able to work with others, communicate well and receive direction when needed to achieve department goals and objectives.
  •  Must be able to meet Specific Job Requirements and perform Position Responsibilities for the role

Physical Requirements

  •  Continuous standing -during preparation, during service hours or during expediting.
  •  Lifting, pushing, pulling and carrying up to 50 lbs.
  •  Balancing, stooping kneeling, crouching, crawling, reaching and handling throughout the shift.
  •  Mobility -full range of mobility and the ability to travel up to 300 feet on a regular basis throughout the shift.
  •  Must be able to exert well-paced ability in limited space.
