It is the Bar Manager's responsibility to ensure that bar operations are run efficiently, meeting the highest standards of quality, service and profitability, with the objective of satisfying guests' needs.
Responsibilities:
Maintain the cost of beverages authorized monthly, based on the parameters of the established budget.
Control the stock of beverages per consumption center, making sure that there are sufficient beverages for the operation of the different Bars.
Monitor the correct rotation of all supplies among the hotel bars.
Periodically verify the maximum and minimum number of wines and liquors that each bar should have.
Constantly supervise the operation, supply assortment and service of the bars, by supervising the assembly of the bars to ensure that they are ready for service and that they meet the established standards.
Maintain close communication with the restaurant to work in coordination.
Coordinate with Banquet supervision on pre-event needs.
Follow up on areas of opportunity reported by Guests and monitor that it does not happen again.
Oversee special events to ensure that the needs determined within the BEO`s (*BEO`s Banquet Event Order) are met.
Read and follow up on outstanding items described within the corresponding log.
Perform the inventory of shrinkage and concentrate them in the assigned place for follow up.
Keep track of operational equipment breakage for proper management.
Take inventories of operational equipment to keep control of it.
Master the bar recipe books to know the preparation, control the costing and train your staff.
Elaborate requisitions according to the week's operation and follow up on them and ensure that the product delivered by the Warehouse complies with the quantities and quality requested.
Monitor and coordinate the preventive and corrective maintenance of the area ensuring compliance with the plan.
Attend to suppliers who provide a service to the bar department within the hotel.
Supervise the person in charge of Minibars based on the supply of the rooms, to guarantee the satisfaction of the Guest.
