The Restaurant Supervisor and Head Chef will have overall responsibility for the smooth operations of the restaurant, for the food quality and the efficient operations of the kitchen.

Functions:

 Administrative

  • Supervises chefs and all staff to ensure that duties are being carried out as required.
  • Trains chefs and all staff to ensure they are knowledgeable in their job functions.
  • Schedules daily and weekly tasks and assists in the preparation of staff work schedule to ensure maximum efficiency.
  • Provides daily and weekly cash reports and reconciliation and accounts for variances.
  • Uses software to prepare weekly/monthly/annual sales, income and expenditure reports and other accounting records.
  • Assists in preparing payroll and ensuring that taxes, deductions and regulatory requirements are met.

 Purchasing

  • Conducts stock count of inventory and accounts for variances.
  • Ensures that materials are ordered and delivered in a timely manner and that sufficient materials and finished product inventory are always on hand.
  • Assists in search for (additional) suppliers, and secures the best prices for materials.

 

Food Service, Customer Service & Cash Management

  • Leads the chefs and servers in preparing and serving delicious and attractive meals.
  • Ensures that food is adequately pre-prepped to facilitate speed, consistency and efficiency.
  • Collects cash from in-store sales and accounts for cash movement.
  • Ensures that lodgments are made in a timely manner.
  • Assists customers, explains the menu offerings and answers customer questions.
  • Upsells customers by proposing additional menu items to complement items ordered.
  • Ensures customer satisfaction and solves customer issues.

 

Production and Quality

  • Ensures that standard procedures and recipes are documented and current to ensure consistency.
  • Works according to standard recipes and procedures, and ensures that all staff conform to recipes, procedures and policies.
  • Ensures that all areas, work and dining areas, equipment and work tools are clean and sanitized.
  • Ensures the quality of raw materials and finished products and meals.
  • Ensures protection and preservation of company’s materials and resources to prevent damages and loss.
  • Ensures that quality, food safety and inventory tracking records are completed accurately.
  • Ensures that the company meets Bureau of Standards and Public Health Requirements by adhering to Good Manufacturing Practices (GMPs) and facilitating inspections.

 

Sales & Marketing

  • Creates and implements various marketing strategies and utilizes various marketing media to boost sales.
  • Communicates marketing materials to prospective customers and seeks out business contracts and catering opportunities.
  • Seeks out, plans and attends promotional events.
  • Creates or supervises the creation of content for social media pages.
  • Manages business’ social media pages and general online presence. Posts content and responds to messages and comments.
  • Creates and adheres to social media posting schedule. Ensures frequent and consistent posting.
  • Speaks on behalf of the company for marketing purposes and communicates with media houses.

 

Recipe and Product Improvement & Development

  • Develops and improves standard recipes to improve quality while controlling cost.
  • Researches new or improved product and meal ideas based on customer feedback, and assists in realization of new or improved products and offerings.
  • Documents and implements standard food portion sizes and verifies that these are followed.
  • Calculates and controls recipe costing and makes suggestions to minimize recipe cost.

 

Job Specifications

  • Minimum 2 years’ experience in commercial food preparation.
  • Diploma in a food related discipline or minimum 1-year experience in a Food & Beverage Supervisory role.
  • Excellent knowledge of Microsoft Office.
  • Knowledge of QuickBooks/Zoho Books, Loyverse or other accounting and inventory management software is an asset.
  • Great culinary creativity.
  • Willing and able to fill in for the Chef and any position when required.
  • Great computation and money management skills.
  • Excellent customer service and communication skills
  • Highly self-motivated and target driven
  • Good management and interpersonal skills
  • Able to use initiative and good problem solving skills.
  • Ability to independently plan and organise one’s own activities.
  • Reliable, accountable, responsible and trustworthy
  • Valid food handlers permit
  • Able to work early morning and late evening.
  • Possession of a drivers’ license is an asset.
