The Food and Beverage Manager will oversee all buffet operations at our all-inclusive resort, managing both front-of-house and coordination with back-of-house teams to ensure an exceptional dining experience.

Key Responsibilities:

Operational Management

  • Oversee daily operations of the buffet restaurant, ensuring smooth service, food quality, and cleanliness.
  • Coordinate with the Executive Chef to maintain consistent food presentation, quality, and freshness throughout the service period.
  • Implement traffic flow and guest service strategies to manage peak dining hours effectively.

Guest Satisfaction

  • Actively engage with guests to receive feedback and address concerns in real-time.
  • Ensure buffet offerings meet diverse dietary needs and preferences, with clearly labeled stations (e.g., vegetarian, gluten-free, dairy-free).
  • Collaborate with the culinary team to create themed buffets and special events that enhance the guest experience.

Team Leadership and Development

  • Recruit, train, and manage front-of-house buffet staff, including servers, hosts, and supervisors.
  • Conduct pre-shift briefings to align the team on daily goals, specials, and service standards.
  • Mentor and provide ongoing performance feedback to maintain a motivated, high-performing team.

Inventory and Waste Management

  • Monitor food and beverage inventory, ensuring adequate stock levels while minimizing waste.
  • Collaborate with the Executive Chef to adjust orders and plan menus based on guest demand and seasonality.
  • Track and report on food cost per guest and waste percentages, implementing strategies to improve efficiency.

Health and Safety Compliance

  • Ensure all buffet operations comply with health, safety, and sanitation regulations.
  • Conduct regular training on food safety practices and ensure that staff maintain cleanliness standards.

Reporting and Analysis

  • Prepare reports on buffet performance metrics, guest satisfaction, and operational efficiency for management review.
  • Utilize guest feedback and performance data to make continuous improvements to buffet operations.

Qualifications:

  • Experience: Previous experience in food and beverage management, preferably in a resort or all-inclusive setting.
  • Strong knowledge of food and beverage operations, menu development, and guest service excellence.
  • Excellent leadership and interpersonal skills, with the ability to inspire and motivate a diverse team.
  • Strong organizational skills and attention to detail.
  • Food Handlers Permit Required
  • Proficiency in Microsoft Office Suite
  • Ability to analyze data and make informed business decisions.
  • Flexibility to work varied shifts, including evenings, weekends, and holidays.
