Job Overview:

The Pastry Sous Chef will be responsible for preparing, cooking and serving pastries.

Duties & Responsibilities:

  • Decorating & baking a large range of cakes & pastries from scratch
  • Ability to work closely with a team of professionals.
  • Working closely with the Directors to implement and improve processes and procedures.
  • A clear understanding of HACCP principals and applications
  • Management of kitchen staff in a busy and diverse operation
  • Sourcing suppliers to ensure a reliable supply of ingredients, testing new recipes and working with a team of other Chefs.
  • Training other kitchen staff on proper food handling procedures and safety practices
  • Following recipes and procedures for making pastries, including making dough from scratch or using commercial mixes
  • Managing the daily operations of the pastry department, including overseeing staff performance, ordering supplies, and planning menus
  • Preparing dessert or pastry recipes for special events such as weddings and other celebrations
  • Determining which ingredients are needed for each recipe and ordering supplies as needed.
  • Make daily rounds of the kitchen to check on food preparation progress, identify problems, and help correct them.
  • Preparing the pastry kitchen for service by setting up workstations and equipment, including refrigerators, ovens, mixers, and sinks

 

Qualifications:

  • 5 years’ experience in the field.
  • Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
  • Culinary school diploma or degree in food service management or related field
