Food Services Supervisor
Core Functions:
• Supervise the kitchen operations of the Food Services Centre, to include the production and distribution of meals
• Complete menu costing as required and reinforce the use of standard recipes to ensure budgetary compliance, reduction of waste, portion control and the maintenance of meal standards
• Manage and maintain the inventory records of food and non-food supplies
• Liaise with suppliers to request quotations, place orders and ensure that the best quality goods are purchased at the best prices.
• Performance monitoring and assessment of kitchen staff
• Reinforce and monitor safety, sanitation and equipment cleaning standards within the context of the Public Health Act and applicable NCB Group policies
• Organize and oversee catering services for meeting and functions within the NCB corporate area branches as required
Qualifications and Experience:
• Degree in Food Science/Institutional Management, or HEART Trust Commercial Food Prep Level 4
• Minimum of 3 years’ experience as a food services supervisor in a large scale operation with knowledge of industrial equipment and procedures in the cooking and distribution of food.
• Experience in menu planning, menu costing and adjustment of recipes to apply to quantity cooking
• Experience in procurement and inventory management
• Food Handlers Certification, knowledge of occupational safety standards, HACCP and public health regulations for food service institutions
• Competence in Microsoft Office suite
