He/She will ensure that the quality of the culinary operations is maintained at an international standard at all times.
We are looking for a creative Executive Chef to be responsible for managing and overseeing the entire culinary operations in the Kitchen Department as well as the team members at Decameron Club Caribbean in Runaway Bay.He/She will plan menus and liaise with suppliers and control the budget.
Summary of Duties & Responsibilities:
Oversee the entire culinary operation
Source authentic products
Menu designs
Overseeing timely preparation of meals in all restaurants
Creation of signature dish or dishes for the a la carte restaurants
Ensure restaurants operate efficiently and at an international standard
Maintain Cost Control Procedures
Tracking and ordering of food items
Manning Control to include scheduling and monitoring of time and attendance
Ensure HACCP standards and Health and Safety regulations are maintained
Maintain high culinary standards
Ensure standard operating procedures are maintained
Assist with the recruiting of kitchen personnel
Provide training and guidance with food preparation and specialty menus

QUALIFICATIONS & EXPERIENCE
Bachelor’s degree in culinary science or relevant field.
Strong knowledge of cooking methods, kitchen equipment, and best practices.
Good understanding of MS Office
Must have worked at least 5 years in the hospitality industry as an ExecutiveChef.
Must have a deep and clear understanding of International Cuisine style, history, tradition, & culture
Advanced knowledge of food professional principles and practices
In-depth knowledge of food industry and trends
