The Head Baker is responsible for managing and operating the bakery section of the kitchen.

Position: Head Baker 

The Head Baker is responsible for managing and operating the bakery section of the kitchen. This role will also involve creating high quality pastries, desserts and breads with standard recipes and presentations in order to maintain quality and consistency of products geared to meet our customer demands. 

Key Responsibilities 

  • Design menus and develop recipes appropriate for the preparation of all daily desserts, pastries and breads.

  • Ensure menus and recipes are constantly updated, paying attention to seasonal availability and the best use of inventory quantities.

  • Supervise food preparation, ensuring adherence to recipes, quality, and health and safety standards.

  • Maintain stock levels, coordinate ingredient deliveries, and manage inventory rotation.

  • Develop and execute departmental goals, including cost-saving strategies.

  • Engage with customers by promoting specials, addressing inquiries, and organizing sampling sessions.

  • Ensure security and safety by maintaining cleanliness, reporting abnormalities, and upholding hygiene standards.

  • Monitor and ensure that deli/bakery personnel adhere to company rules, regulations and procedures

Knowledge & Skills 

  • Ability to optimize workflow and coordinate tasks to maximize productivity in the Bakery.

  • Ability to lead and oversee kitchen operations, guiding kitchen staff in menu creation, recipe development, and pastry preparation techniques.

  • Strong leadership, communication, and organizational abilities to effectively manage kitchen operations and mentor staff.

  • Exceptional time management skills to handle high-pressure environments, meet deadlines, and ensure smooth service.

  • Quick thinking and resourcefulness to address kitchen-related challenges and maintain a positive work environment.

Requirements  

  • An approved qualification from a Culinary Institute in food preparation and/or pastry making.

  • At least two (2) years’ experience in a managerial/supervisory position.

  • Experience in managing a commercial-sized kitchen is an asset.

  • Experience in managing a workforce of over ten (10) persons.

  • Demonstrated ability to convey information through writing and speech.

  • Demonstrated ability to lead and manage a team to achieve company goals.

  • Demonstrated ability to deliver good customer service.
